Iron Skillet Mania?

Thanks to a sale at Tractor Supply Co. and a coupon, I was finally able to afford the cookbook I have been eyeballing for a few months. It has a recipe for anything and everything made in an iron skillet. Since I am the proud owner of 4 randomly sized iron skillets, this seemed to be the cookbook for me! Last night I picked out some recipes and went crazy!




This strange looking dish is called "Skillet Supper". There are 4 hamburger patties underneath the corn/potatoes/carrots/cream of mushroom soup. It was pretty darn good.


This is fried green beans with bacon!


Last, but not least "Baking Powder Biscuits". This is the dish I am most proud of. Many of my past biscuits were um, shall we say, not round, not edible, and not cookable. Mainly because I couldn't get them peeled off of my rolling pin. Anyways, I have round, edible, and completely cooked biscuits! Yay!

    But, just in case, send me the Skillet Supper recipe. Looks delicious.

  6. It has to cook in the oven, so I'm not sure if another pan would work, but it might work in a casserole dish or something maybe?? Anyways, due to popular demand...

    Skillet Supper
    1 lb ground beef
    1 onion sliced
    2-3 red potatoes, sliced and parboiled
    2 small carrots, sliced
    1 (160z) can whole kernel corn, drained
    Salt and pepper to taste
    1 can cream of mushroom
    1/2 soup can water

    Shape ground beef into 4 patties. Cook in oil over med-high heat until just brown. Place patties in large iron skillet. Layer onions, potatoes, carrots, and corn. Sprinkle salt and pepper. Combine soup and water for gravy. Pour all over. Cover with foil. Bake 350 degrees for 45-50 min.
