Cow Camp's Recipe Swap!



I participated  in the "Cow Camp Recipe Swap" a couple of weeks ago, and this is the recipe I got!


It came from LeAnna over at "Thoughts and Whatnots!"


Chocolate Pie

2 1/2 cups half and half
1/3 cup sugar
pinch salt
6 egg yolks
2 tbsp cornstarch
1/2 stick butter
6 oz semi sweet chocolate
1 oz unsweetened chocolate
1 tsp vanilla

Combine half and half and salt, bring to a simmer in medium sauce pan. Whisk together yolks, sugar, and cornstarch in a seperate bowl. Temper 1 cup half and half mixture into egg yolk mixture. Whisk until smooth. Pour tempered egg mixture back into the rest of half and half, mix. Reduce heat and whisk constantly. Return to a simmer and cook until thickened and clings to a spoon. Constantly scrape bottom to keep from burning. Take off heat and whisk in chocolate until melted, add vanilla and finish off with butter. Whisk until butter is melted and mixture is glossy. Pour into a baked and cooled pie crust or a graham cracker crust. Place plastic wrap over top and chill for 3 hours+. Top with whipped cream and serve.
