Bama Birthday Bash!

Yesterday, we celebrated my 25th birthday (it was Aug. 31st) by inviting some family over and ordering the Alabama football game on Pay-Per-View!
Look, it's some excited party goers (my mom and I)  playing with my new camera!
And here's Lance with our neighbors/2nd cousins, Johnny and Elaine sitting in the kitchen near the goodies, of course!
These people don't seem to mind if they eat all the goodies, they're watching the Bama game! That's my mother in law, Lynn, on the left, Lance's Aunt Nell in the center, and my grandmother, Martha, on the right. My other grandmother, Barbara, hid in the bedroom during the ballgame and I forgot to take her picture. But I'll get her next time!
And neither do these folks. Lance's Uncle Jim is on the left, my father in law David, in the middle, and my dad on the right. See those white buckets sitting around? No they're not puke buckets for when Bama makes a mistake on the field...they're peanut hull buckets! We combined our first "test peanuts" on Saturday, and I boiled some up for the game!
You know you're getting older when you get trashbags, soap, Ziploc bags, and socks for your birthday, and you get excited because you can mark them off your grocery list for the week.
Anyways, back to the goodies I mentioned before. Way too much like usual! I thought I would share the recipes for some of it!

Redneck Caviar
2 cans field peas
2 cans shoepeg corn
2 cans Rotel tomatoes
1 can diced tomatoes
1 (16oz) bottle Zesty Italian dressing
1 tsp. garlic salt
12 green onions
Drain peas, corn, and tomatoes. Mix together. Chop the green blades of the green onions, add to pea/corn/tomato mixture. Add dressing and garlic salt. Mix. Place in collander and press all liquid out. Leave in fridge overnight (in collander). Serve with corn scoops.

Spinach Dip
1 package (10 oz) frozen chopped spinach, thawed and squeezed dry
1 container (16oz) sour cream
1 cup mayo
1 package "Knorr" Vegetable Soup recipe mix
3 green onions, chopped (optional)
Combine all ingredients, and chill for 2 hours. Serve in bowl or bread bowl with Ritz crackers.

Peanut Butter Pretzel Chocolate Chunk Cookies
1 cup butter
1 cup peanut butter
1 cup sugar
1 cup brown sugar
1 tsp. vanilla
2 whole eggs
3 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 3/4th cup crushed pretzels
12 oz. chocolate chips
Heat oven to 350 degrees. Beat butter/peanut butter/sugar until creamed. Add vanilla/eggs. Mix. Add flour/baking soda/baking powder. Mix well. Add pretzels/chocolate chips. Mix till combined. Place dough on ungreased cookie sheets, 2 inches apart. Bake 8-10 minutes. Cool on rack.
